SUNDAY BRUNCH: Father’s Day Beignets

After a fun, action filled, whirlwind of a visit my family packed up and headed home this morning. In honor of the very special holiday I whipped up a quick batch of beignets for a  pre-travel bite. I’m not a huge baker, so anything that is pastry-like but doesn’t require exact measurements or extensive oven time gets a big thumbs up in our world.

Oh and yes, I make my Beignets from a box mix. No apologies people, sometimes box is better.

Toss in some fresh cherries and it is pretty hard to go wrong…

Growing up your Dad can be so many things, but as I’ve gotten older, ahem… I’m thankful that my father-daughter relationship has turned into a friendship. No matter what time I call, how foul my mood, or how boring my daily recap may be, my father is always at the other end of the phone. He is a fantastic listener and I’m lucky to have someone who cares so much, even if it is just about what I had for dinner.
